Recipe: La Madeleine’s Tomato Basil Soup

A couple years ago I had the priviledge of going to La Madeleine’s in Rockville, MD. It was very quaint, charming, and had a very french environment. I enjoyed it a lot, -especially- their tomato basil soup (though Signature soups has a great recipe as well). I just happened across the recipe so I thought I’d share:

La Madeleine’s Tomato Basil Soup
Yield: 8 servings

4 c Tomatoes (8-10) — peeled, Cored And chopped
Or
4 c Canned whole tomatoes — Crushed
12 Fresh basil leaves — Washed
1 c Heavy cream
1/4 lb Sweet unsalted butter
Salt to taste
1/4 ts Cracked black pepper — Cracked

Combine tomatoes, juice and/or stock in saucepan. Simmer 30 minutes. Puree, along with the basil leaves, in small batches, in blender or food processor.

Return to saucepan and add cream and butter, while stirring, over low heat. Garnish with basil leaves and serve with your favorite bread.
